Another Day, Another Salad


Hello everyone! 
 
 
 
I can't believe I haven't posted here since December 22! I became busy around 
christmas/new year, and all of a sudden a month went by. I'm headed back to 
school in 3 short days, and knew I wanted to get in at least 1 more blog post. 
Hopefully I'll even be able to sneak in one more before Monday. While looking 
through all the recipes I've cooked, I realized a good majority of them have 
been salad. Salads can be made quickly, and you can mix and match different 
ingredients to make a different salad each day of the week. . The salad I made 
today is one of my favorite to date. After watching the Food Network, and seeing 
some chefs on Chopped cook with bacon, I decided to come up with my own bacon 
inspired dish. It has a good medley of different flavors, is quick to make, and 
actually looks good when you photograph it. (take a look at the pic below). 
Here's the recipe to my 
 
 
 
Romaine Lettuce with Goat Cheese, Balsamic Vinaigrette,  and Crispy Bacon 
 
 
 
For the balsamic vinaigrette. (makes enough vinaigrette for 3-4 salads) 
 
*2 tbsp balsamic vinegar 
 
*4 tbsp olive oil 
 
*1/2 tbsp dijon mustard 
 
*salt & pepper to taste 
 
 
 
In a small bowl, whisk the ingredients above. Set aside in fridge to get cold 
 
 
 
For the Crispy bacon 
 
*2 slices of bacon (any brand). 
 
Dice bacon into very small bite size pieces 
 
In a small skillet, cook bacon over medium heat 6-10 min until dark brown and 
crispy 
 
Drain bacon & set aside 
 
*Note: You want the bacon to resemble bacon bits, so if it is too large, feel 
free to chop it up after cooking & draining 
 
Preparing the Salad 
 
 * 1 to 1 1/2 C Romaine Lettuce 
 
* 3-4 tbsp goat cheese 
 
Place 1 C -1 1/2 C Romaine Lettuce on a place 
 
Top Romaine Lettuce with goat cheese 
 
Take dressing out of fridge, and drizzle on top of salad 
 
Top salad with crispy bacon

Thoughts on the Recipe: I really love this recipe. It is simple, and I love all 
the flavors. I think bacon & goat cheese are a very natural pairing. Goat cheese 
has a nice tang to it, while bacon has a nice saltiness. The vinaigrette blends 
well with the bacon and goat cheese without overpowering it. When you get the 
best bite with everything on one fork, the flavor is magic. I had the salad with 
some fresh italian bread on the side. If you try out this recipe, you'll have a 
delicious, flavorful meal that is easy to make.
